Recipe- Spaghetti Carbonara (Slimming World Friendly)

 

This Spaghetti Carbonara was a Family win for us all, sometimes I can find it very difficult to make dinners that we all like including MR.B as he is a big fuss pot, so this was perfect! 

It's creamy, indulgent & pretty damn tasty!
It's also pretty easy to make with very minimal effort put in, which is always a bonus. 
And if your following Slimming World this is completely Syn Free if you count the Pecorino Cheese as your HEA.

I urge you to try this dish, it is AMAZING!! 

With 5 minutes preparation time & about 20 minutes cooking time, you can't really go wrong, so what are you waiting for? 

Ingredients- Serves 4
  • 120g Dried Spaghetti 
  • 200g Gammon, cut into little pieces 
  • 30g Pecorino Cheese (30g is one HEA)
  • 1/2 Brown Onion, diced
  • 1x Pack of Button Mushrooms, sliced
  • 1x Egg
  • 2x Tbsp Quark
  • 1x Tsp Freshly Ground Black Pepper
  • 300ml Vegetable Stock
  • Handful Fresh Parsley, chopped
  • Frylight
  • 1x Tbsp Mustard, optional
Method
  1. Boil the kettle - whilst you're waiting for it to boil chop the onion, mushrooms and bacon.
  2. Cook the pasta as per instructions on the pack, & heat a large frying pan with a few sprays of frylight in. Fry the onions till softened, add the mushrooms & gammon and cook till browned slightly.
  3. Add the vegetable stock to the frying pan, & cook on high stirring frequently until it reduces by half.
  4. Meanwhile in a bowl whisk the eggs, black pepper, Quark & mustard (if you're using it!) - set aside.
  5. Drain your pasta once it's cooked and tip into a big bowl, add the cooked onions, mushrooms, remaining stock and gammon - stir well. Slowly add the whisked eggs, Pecorino cheese and Quark making sure to stir constantly. Do not do this on the heat otherwise you'll end up with scrambled egg!!
  6. Once it's all stirred through, add the parsley. Plate up and sprinkle with a little more Pecorino cheese. Enjoy!
