Recipe- Tomato & Halloumi Bake

 

This Halloumi Bake perfectly combines the healthy freshness of veggies with the chewy, salty halloumi for a delicious vegetarian dinner.

It was my first time making this dish, luckily it was a big hit with the 2 elder children. There are onions, courgettes & tomatoes hidden underneath all that glorious halloumi, all of which the children supposedly hate, but both cleaned up their plates now problem. 

This was super quick & easy to make with only 10 minutes prep time & about 30 minutes cooking time. 

Ingredients- Serves 4
    1. 1x Onion, diced
  • 3x Cloves Garlic, chopped
  • 2x Courgettes, chopped into quarters
  • 6x Medium Tomatoes, sliced
  • 1x Tbsp Tomato Purée
  • 1x Tbsp Tumeric
  • 1x Tsp Cumin
  • 1x Tsp Paprika 
  • 1x Tsp Chilli Flakes
  • Sea Salt & Ground Black Pepper, to taste
  • 200g Halloumi, sliced
  • 1x Tbsp Olive Oil
  • Handful Fresh Basil, to garnish (I forgot mine)
 

Method
  1. Heat the oil in a frying pan over a medium heat. Add the onions & fry until they have softened up, then add the garlic & fry for a little longer. (About 2 minutes.)
  2. Add the tomatoes, courgettes, tomato puree, tumeric, cumin, paprika, chilli flakes, salt & pepper. Cook for a further 20 minutes until everything is softened & the tomatoes have released their liquids. 
  3. Heat the grill to medium-high, removing the frying pan from the hob & place the slices of halloumi across the top of the veggies. Place under the grill until the cheese has browned. Sprinkle with basil before serving. 
I served mine up with a side of Salad & Slimming World Chips. It really was delicious & extremely substantial!
